Everyday around 3pm, I like to have a second cup of coffee. I used to just have a regular cup, and then on Saturdays I would get an almond milk latte. I don’t know why I chose just Saturdays but that rule was quickly broken and now it has become a Monday-Sunday sort of ritual and it brings so much happiness into my life. I often like to have a snack with my coffee, and i wanted to try and make my own biscotti! I don’t know if I just didn’t bake it long enough or where i went wrong, but this definitely isn’t biscotti. Instead it tastes like those chocolate brownie clif bars and the best part is it’s vegan, gluten free, and contains zero added sugar! Does it get better than that?! I think not. So instead of counting it as a recipe fail, I’m just going to change the name a call it a success! Keep in mind they aren’t overly sweet so if you want something a bit sweeter feel free to add some coconut sugar or maple syrup to your mix but i personally don’t think it needs it! Hope you enjoy! 🤗
CHOCOLATE BROWNIE CLIF BARS: 💞 1 cup almond flour
💞 1/2 cup unsweetened cocoa powder
💞 1/2 cup unsweetened applesauce
💞 2 tsp vanilla extract 💞 3 chia eggs (mix 3 tablespoons chia seeds with about 1/4 cup water)
💞 pinch of salt
💞 1+1/2 tsp baking powder and baking soda
Preheat your oven to 375F line a baking sheet and set aside. In a small bowl take you chia seeds mix it with water (you may need a little less water and set aside). In a large bowl combine your almond flour, cocoa powder, salt, baking powder and baking soda and mix together. Then add in your applesauce, vanilla extract, chia eggs (assuming it’s done it normally takes about 5 minutes. It should be thick) and mix together. Place on baking sheet and bake for about 20-25 minutes! Enjoy!
