  • Happy Monday friends!! 🤗 what better way to celebrate the day than with some cookies!! I made this recipe last week and completely forgot to share it!! (Who’s surprised? Not me) but it’s here now and that’s all that really matters! Since i made it last week and wasn’t writing down the recipe as i went (that would be ridiculous) i now am struggling to remember all the goods that went into these. The only thing i can’t remember is if i added almond milk, so please if the batter is too dry just add a little as you go! I’m sorry I’m the worst, but on the plus side they’re vegan, gluten free, sugar free and they’re delicious so maybe that’ll make up for it! Let me know if you try them! 🙂 VEGAN COOKIES RECIPE: 💞 1 cup oat flour 💞 1/2 cup almond flour 💞 1/4 cup nut butter of choice 💞 1/4 cup unsweetened applesauce 💞 1 (5.3oz) container of almond milk yogurt (I used raspberry flavored) 💞 2 chia eggs (mix two tablespoons chia seeds with about 6 tablespoons water and let it thicken up) 💞 1 tsp vanilla extract 💞 1 tsp baking powder 💞 1 tsp baking soda 💞 pinch of salt 💞 chocolate chips (optional) Preheat the oven to 350 and line a baking sheet. Start by making your chia eggs. To do this mix 2 tablespoons chia seeds with and 6 tablespoons of water and set aside. Then in a large bowl put all your ingredients in and mix together. After your “eggs” have formed stir them in and mix together. Once everything is well incorporated, stir in chocolate chips if you’re using them. Bake for about 15 minutes or until golden brown

Lol I do this all the time- make up a recipe, it turns out awesome, and then I can never quite make it again bc I never write down what I did...

I just made these and they are soooooo good! Mine came out more like wonderfully moist scones, and they are incredible. I didn’t have all of the ingredients (which NEVER stops me!) so I used quinoa flour, spelt flour, and whole oats in place of the oat and almond flours, and I added diced apricots instead of chocolate chips, adding to the scone-like experience. YUM! Will absolutely make these again - thank you!!
